Blessed...............

There's one word for the way I feel today........blessed!  I'm blessed for so many reasons, and there isn't enough space on this page to list them!  Today I feel blessed because I spent the holiday weekend with my grandchildren, Molly and Luke.  They are both so precious to me, two of the greatest blessings in my life.  We had a fun weekend.  I spent time in the kitchen with Molly creating some delicious Mexican food, and we worked together on one of her entries in the County Fair.  She has a few entries, and I had the pleasure of watching her create an amazing centerpiece for the table decorating category.  I can't wait to see it displayed at the fair!!!!  While Molly and I crafted and cooked, Jim and Luke fished and did some kite flying.  Of course one of my favorite times is bed time when we all cuddle in bed and read a story.  I know it won't be long before Molly is to "old" for bedtime story telling, so I cherish each and every moment!


Our Miss Molly, just getting to the age where she can wear a little makeup and spread her wings a bit.  She loves doing things and going places with the youth group at our church. 
 
 
 
Master Luke is all boy.  He loves cars and video games, fishing, hiking and all kinds of things that keep Grandpa and Grandma young!
 
Like I said...........I am BLESSED!!!!

A Cozy Kitchen Offering

I tried a recipe for a savory herb bread last night and just had to share the recipe.  It was so delicious!!!  It was a lot of bread for the two of us, but I just couldn't wait to have company over to make it.  Enjoy!



Cheese, Olive, and Buttermilk Herb Bread
  • 2 1/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp dry mustard powder
  • 1/2 cup freshly grated parmesan
  • 1/2 cup grated cheddar cheese
  • 1/2 cup green olives, sliced
  • 8 pieces sun dried tomatoes, sliced thinly
  • 1 tsp freshly ground black pepper
  • 1/4 cup mixture of green onion and Italian parsley (I just used the green onion)
  • 2 tsp thyme leaves or 1 tsp dried thyme (I used fresh)
  • 2 eggs
  • 2 1/2 Tbs olive oil
  • 1 1/4 cup buttermilk
  • Egg wash (optional....I did it) Beat 1 egg yolk with 2 tsp water
  • Extra thyme leaves for topping
Method
  1. Preheat over to 350 degrees.  Spray loaf pan with non-stick cooking spray.
  2. Sift flour, baking powder, baking soda, salt, pepper and mustard powder into a large bowl.  Stir dry ingredients.  Add both cheeses, olives, sun dried tomatoes, green onion, parsley and thyme and stir them together.
  3. In a separate bowl, whisk the eggs, then whisk in the oil and buttermilk until well combined.
  4. Make a well in the center of the flour mixture and pour in wet ingredients.  Stir together to form a thick, sticky batter.  Scrape the batter into the prepared tin and spread it out evenly.
  5. Brush the top of the batter with the egg wash and then sprinkle with the rest of the thyme leaves.
  6. Bake for 40 - 45 minutes or until a fine skewer inserted in the middle comes out clean.  Leave in loaf pan for 5 minutes before turning out onto a wire rack.
  7. Enjoy!!!!!!!!!!!!!!!!!!!

Our Cozy Cottage Guestroom

 
Our guestroom will be filled tonight with one of our favorite guests.......our granddaughter, Molly!  Our grandson, Luke, will also be here.  He has his own room too.  His bed is in the cozy office/craft room.  Since Molly is becoming a young lady she gets the pretty room with the big bed.....and I do mean big.  Luke's bed is small, but he does have "Car" sheets.  Spending time with my grandchildren is one of my favorite things to do.  I am blessed!  I'm sure I will be posting pictures of our adventures.  Sweet dreams!

The Cozy Cottage Neighborhood

 
My Cozy Cottage is located in Shelley Lake, a small neighborhood in the Spokane Valley.  There is a wonderful walking trail around our little lake.  The weather was lovely tonight, so Jim and I decided to take a walk.  Perfect weather, beautiful surroundings, and the best company.  Thank you, Lord, for a wonderful evening!

From the Cozy Kitchen

 
Since I'm getting back into the swing of blogging, I thought I would practice....please be patient with me, okay?  Here's a tasty treat from my cozy kitchen.  I made a blueberry crumb pie for the first time yesterday and it was delicious!!!!!!!!!!!!!!!!!!!  Blueberries are expensive, so I rarely buy them, but we were blessed with a whole baggie full of blueberries yesterday!!!!!!!  Here's the recipe..........

Blueberry Crumb Pie
1 (9 inch) unbaked pie crust
3/4 cup white sugar
1/3 cup all-purpose flour
1 tablespoon cornstarch
2 teaspoons grated lemon zest
1 tablespoon lemon juice
5 cups fresh blueberries

Crumb Topping
2/3 cup packed brown sugar
3/4 cup rolled oats
1/2 cup all-purpose flour
1/2 teaspoon cinnamon
6 tablespoons butter

  1. Preheat the oven to 375 degrees.
  2. Press the pie crust into the bottom and up the sides of a 9 inch pie plate.  In a large bowl, stir together the sugar, flour and cornstarch.  Mix in the lemon zest and lemon juice.  Gently stir in the blueberries.  Pour into the pie crust.
  3. In a medium bowl, stir together the brown sugar, oats, flour and cinnamon.  Mix in the butter using a fork or pastry cutter until crumbly.  Spread the crumb topping evenly over the pie filling.
  4. Bake for 40 minutes in the preheated oven, or until browned on top.  Cool on a wire rack.
